Պանիրը անցկացնել մանր քերիչով:
Կիտրոնի կեղևը նույնպես անցկացնել մանր քերիչով`չկպչելով սպիտակ շերտին:
Լավ խառնել սենյակային ջերմաստիճանում փափկած կարագը, պանիրը, կիտրոնի կեղևը և աղը:

Ավելացնել կաթը, կրկին խառնել:
Ալյուրը խառնել փխրեցուցիչի հետ և մաս առ մաս ավելացնել պանրային զանգվածին, խառնել գդալով: Խմոր հունցել և տեղափոխել այն սառնարան 30 րոպեով:
Գրնտակով բացել խմորը մոտ 30սմ տրամագծով և 0,5-1 սմ հաստության շերտով:
Կտրել ծայրի մասերը, որպեսզի ստացվի ուղղանկյուն:
Կտրատել խմորը 1,5 սմ լայնության ժապավեններով:
Ամեն ժապավենը պարուրաձը շրջել՝ թեթևակի ձգելով այն երկարությամբ:
Ամեն պարույրը գլորել քունջութի մեջ:
Այնուհետև տեղավորել ստացված պարույրները պերգամենտային թղթով պատված տապակի վրա: Թխել ջեռոցում 15-20 րոպե 180 աստիճանում:
Թողնել՝ պանրային ձողիկները սառչեն:
Սկզբում ձողիկները կլինեն թեթևակի փափուկ, իսկ մի քանի ժամ անց կդառնան ամբողջությամբ խրթխրթան:
