Որոշ նշաններով կարելի է որոշել, թե արդյոք փչացած է միսը, օրինակ` մսի մոխրագույն երանգավորմամբ: Կտորի մակերեսին կպչուն լորձի առկայությունը խոսում է մանրէների առկայության մասին: Ալ կարմիր և մոխրագույն բծերը և արյան կուտակումները բացահայտ վկայում են սխալ սառեցման և պահպանման մասին:
Ուշադիր զննեք կենդանու ճարպը. եթե միսը թրջել են կալիումի պերմանգանատի (марганцовка) լուծույթում՝ մսին թարմ տեսք տալու համար, ապա ճարպը ստանում է վարդագույն երանգ: Ցանկացած մսի շաղված եզրերը վկայում են այն մասին, որ այն թաթախվել է քացախաթթվի լուծույթում:

Մսի հիմնական խաբեությունները կապված են ներկման հետ՝ ածխաթթու գազում պահելով կամ ներկանյութերի օգտագործմամբ: Եթե ի հայտ են եկել կասկածներ՝ կապված գունանյութերի օգտագործման հետ, ապա կատարեք կտրվածք մսի կտորի վրա, և զննեք գունանյութերի ներթափանցման աստիճանը:

Վերցրեք Ձեզ հետ թղթե անձեռոցիկ: Անձեռոցիկը դրեք մսի վրա և պահեք այն մի քանի վայրկյան: Եթե միսը ֆիկսինով մշակում է անցել, ապա Դուք անձեռոցիկի վրա կտեսնեք վառ վարդագույն հետք: Միսը նաև պետք է լինի լավ արնազրկված, անձեռոցիկի վրա չպետք է լինեն արյան ակնհայտ հետքեր:

Կա թարմ միսը փչացածից տարբերելու մեկ այլ տարբերակ ևս, եթե միսը ոսկորով է: Միսը չպետք է առանձնանա ոսկորից. փորձեք թեթևակի քաշել այն մասում, որտեղ միսը ամրացած է ոսկորին: Եթե միսը հեշտությամբ առանձնանում է, ապա դա հստակ նշան է այն բանի, որ Ձեր առջև նեխած միս է:

Թարմ միսը սառեցվածից տարբերելու համար առաջին հերթին պետք է մատով սեղմել, եթե միսը թարմ է, ապա տեղը շատ արագ հարթվում է, եթե փոսիկը երկար ժամանակ չի անհետանում, ապա իմացեք, որ ձեր առաջ սառեցված միս է:

Դե իսկ եթե սեղմելիս փոսը արյունով է լցվում, ապա կենդանուն ճիշտ չեն մորթել: Երբեմն մսավաճառները քաշ ավելացնելու համար ջուր են ներարկում: Դա առաջին հայացքից դժվար է նկատել․ սեղմելիս մատի տեղում ջուր է հավաքվում: Հիմնականում դա հասկացվում է տանը` միսը պատրաստելիս, երբ տաք թավայի մեջ մսակտորները շատ ջուր են դուրս տալիս և չափերով զգալի փոքրանում են: 

Հարկ է նշել, որ երկրորդային սառեցումից հետո մսի որակը դառնում է ավելի վատ, գունավորումը դառնում է բալագույն, իսկ մատով հպվելուց հետո գույնը չի փոխվում: Եթե ընտրում եք սառեցված մթերք, ուշադրություն դարձրեք, որպեսզի դրա վրա չլինեն ձյուն կամ արյունոտ սառցե ներհոսքեր. դա խոսում է այն մասին, որ կտորը ենթարկվել է մի քանի սառեցման:

Միս գնելիս պետք է ուշադրություն դարձնել նաև հոտին: Մսի յուրաքանչյուր տեսակ յուրահատուկ հոտ ունի, բայց, ընդհանուր առմամբ, որակյալ միսը պետք է տհաճ, վանող հոտ չունենա: Եթե հենց առաջին հայացքից վատ հոտ եք առնում, ավելի լավ է միանգամից հրաժարվել: 

Միս ընտրելիս կարելի է առաջնորդվել նաև գույնով: Եթե մուգ գույն ունի, իսկ ճարպաշերտը դեղնավուն է, ապա դա կա՛մ շատ հին է, կա՛մ էլ ծեր անասունի է: Խոզի և գառան միսը պետք է ունենան բաց վարդագույն երանգ: Եթե ձեզ առաջարկում են անբնական վառ կարմիր միս, ապա դա, ամենայն հավանականությամբ, արհեստական վերամշակում անցած միս է:

Վերցրեք Ձեզ հետ թղթե անձեռոցիկ: Անձեռոցիկը դրեք մսի վրա և պահեք այն մի քանի վայրկյան: Եթե միսը ֆիկսինով մշակում է անցել, ապա Դուք անձեռոցիկի վրա կտեսնեք վառ վարդագույն հետք: Միսը նաև պետք է լինի լավ արնազրկված, անձեռոցիկի վրա չպետք է լինեն արյան ակնհայտ հետքեր:
