Չկարծեք, թե բոլոր լավագույն ալկոհոլային խմիչքներն արդեն հորինված են, իսկ մեր ժամանակներում հայտնված խմիչքներն ուղղված են բացառապես զանգվածային սպառմանը և չեն կարող գրավել գուրմանների ուշադրությունը։ Ոչ, բարեբախտաբար, այդպես չէ։

Նման ըմպելիքի օրինակ է Pommeau De Normandie-ն՝ ֆրանսիացի վարպետների զարմանալի արտադրանքը: Այդ ըմպելիքը դասակարգվում է որպես միստել, այսինքն՝ ալկոհոլային ըմպելիք, որը ստացվում է նույն մրգից պատրաստված սպիրտին մրգային զանգված խառնելով։ Պոմմո միստելի դեպքում դա խնձորն է, այսինքն՝ գործ ունենք խնձորի խյուսի և կալվադոսի՝ խնձորի օղու օգտագործման հետ: Այդ ըմպելիքը պաշտոնական ճանաչում է ստացել միայն 1991 թվականին, թեև մինչ այդ էլ կալվադոսը խառնում էին խնձորի և այլ մրգերի խյուսերի հետ։

Pommeau De Normandie-ն արտադրվում է միայն Նորմանդիայում։ Ավելին, բաղադրատոմսի որակը վերահսկվում է այդ նահանգի ղեկավար մարմինների կողմից։ Պոմմո պատրաստելու համար օգտագործվում է կոնկրետ այգիներում աճեցված խնձորի մոտ երեք տասնյակ տեսակ։ Ավելին, կալվադոսն ու խյուսը պետք է պատրաստվեն նույն այգու խնձորներից։ Սկզբից կալվադոսին ավելացնում են թարմ խնձորի հյութ՝ մեկը երկուսին հարաբերակցությամբ։ Ապա այն պետք է հնանա առնվազն մեկ տարի: Ստացված խառնուրդը պետք է պարունակի 18 % սպիրտ։ Ապա մանրակրկիտ տրորած խառնուրդը լցնում են 400 լիտրանոց տակառների մեջ։ Այդ՝ հատուկ պատրաստված տակառները պետք է լինեն 5 տարեկան, եթե առաջին անգամ են օգտագործվում Պոմմո պատրաստելու համար։ Այդ տակառներում ըմպելիքը հնեցվում է երկար ամիսներ։ Կանոնները պահանջում են 14 ամսով հնեցում, սակայն իրենց հարգող արտադրողները սովորաբար հնեցնում են մինչև 30 ամիս: Ըմպելիքի գույնն ուղղակիորեն կախված է հնեցման ժամանակից։ Այն տատանվում է սաթից մինչև մուգ շագանակագույն երանգների շրջանակում: Հնեցումից հետո ալկոհոլի պարունակությունը նվազում է մինչև 17 %, ինչը ստանդարտ է: Հարկ է նաև նշել, որ Պոմմոյի արտադրության մեջ հավելումներ չեն օգտագործվում, անգամ շաքարավազ։

Արդյունքը խնձորի, տանձի, սալորաչրի և կաղնու զարմանալի բույրով խմիչքն է: Պոմմոյի համը կարող է մի քիչ տարբերվել տարբեր արտադրողների պարագայում, քանի որ վերջիններս կարող են ավելացնել կրեմային նոտաներ կամ դարչինի և մեղրի նրբերանգներ: Հետհամն առանձնանում է խնձորի սերմերի որոշակի հաճելի դառնությամբ։ Իսկ, ընդհանուր առմամբ, Pommeau De Normandie-ն ունի չափազանց հավասարակշռված և հիշվող համ: Նույնիսկ աշխարհահռչակ գինու քննադատ Ռոբերտ Փարքերն է ասել, որ դա, թերևս, ամենալավ ըմպելիքն է այն ամենից, ինչ ինքը երբևէ փորձել է:
